Tomato powder is used in the preparation of soups, sauces, flavoring spice blends, gravies, and juices. Adding hot or cold water quickly rehydrates the tomato powder. Tomato powder is a dehydrated flour obtained from fresh, sun-ripened tomatoes, with an extremely concentrated flavor: 1 kg of flour is equivalent to approximately 13.6 kg of fresh tomatoes. This product can be used in place of tomato puree to season and flavor soups and sauces. Tomatoes contain significant amounts of vitamins : especially B vitamins, ascorbic acid, vitamin D, and, above all, vitamin E, which give tomatoes their renowned antioxidant properties. The mineral content is also significant: iron , zinc, selenium, phosphorus, and calcium , combined with citrates, tartrates, and nitrates, act synergistically to ensure remineralizing and anti-free radical properties. It also contains moderate amounts of organic acids , such as malic, citric, succinic, and glutenin, which aid digestion. But the tomato's beneficial properties don't end there; we've mentioned its marked ability to stimulate diuresis (diuretic properties), making it an excellent refreshing and purifying vegetable, useful for eliminating excess waste.
