The starch obtained from the tapioca tuber can be used in a variety of ways: it makes cake batters soft , creams smooth, and works as a thickener for sauces. It gives a soft texture to cake batters, muffins , or other leavened doughs and makes the crust slightly crunchy . Tapioca starch, obtained from the cassava root, is naturally gluten-free. Tapioca starch, with a consistency similar to cornstarch, is white in color and has a neutral, slightly sweet flavor that doesn't overpower other flavors. It's an excellent thickener, widely used in puddings and to thicken sauces, as well as to thicken very watery fruit-based fillings used in sweet and savory pie shells, to prevent the pastry from ruining. For best results, it's best to let tapioca soak with sugar and fruit for about fifteen minutes before using it. When cooked, it forms a gel with a slightly stringy texture, and as it cools, it forms a light, very shiny gel. In cake, muffin, or other leavened doughs, it lends a soft texture and adds fluffiness, as well as a light crunch to the crust. In baked custards, it reduces the formation of surface cracks. Products thickened with tapioca starch can be stored in the refrigerator or freezer without separating.

In gluten-free cooking, it is used to add structure, improve the texture of preparations, and make doughs softer.
