The flour obtained by stone-ground flaxseed is a nutraceutical, meaning it is both a food rich in beneficial properties for the body and a true natural medicine. It comes in the form of a rather coarsely ground flour, yellowish-brown in color, and greasy to the touch. Flaxseed flour has the characteristic of maintaining all the beneficial properties of the seeds unchanged, compared to which it has the not inconsiderable advantage of being easily absorbed by the intestine. Flaxseeds, in fact, have a rather hard outer bark and, therefore, if they are not first softened in water or another liquid, it may happen that they are not digested, but pass through the gastrointestinal tract to be expelled intact through the feces. In these cases, our body is unable to benefit from their very important nutrients. In the case of flour, however, the nutritional properties contained in the seeds are always fully assimilated by our body. The seeds of Linum usitatissimum, an annual plant belonging to the Linaceae family, contain: omega 3 lignans dietary fiber many essential minerals (calcium, sodium, phosphorus, magnesium, iron, potassium, manganese, selenium and copper) vitamins (B1, B2, B3, B5, B6, C, E and K) Golden Linseed Flour is obtained by stone-grinding raw flax seeds. It is very oily and rich in noble fats, and keeps slightly less well than traditional flour. It is used in a ratio of 20% to 30% with wheat flour for baked goods.
