Margherita wheat is also called bidì. Bidì or Margherita is an ancient Sicilian wheat. Fields sown with this variety produce approximately 50 percent less than modern varieties—20 quintals per hectare instead of 40 or 50—the wheat and its derivatives are characterized by a very low gluten content and are therefore highly digestible. Grown in Maniace, in the valley between the Nebrodi and Etna parks, Margherita wheat has ancient origins.
