Bamboo flour is very finely grained and perfect for all low-carb preparations. Bamboo flour isn't actually flour; it's essentially fiber, which is why it's widely used by those following a ketogenic diet. This powdered food product is made from 100% pure bamboo fiber, obtained from the most fibrous parts of the bamboo plant. In addition to being an insoluble fiber supplement, bamboo fiber is also used as a thickener in many food preparations. Specifically, it's a source of insoluble fiber with a high cellulose content, used to add texture to fruit juices, beverages, spices, canned goods, baked goods, pasta, fragile products, batters, grated cheese, sauces, mustards, and ketchups. Bamboo fiber is therefore a functional ingredient with a structuring effect. In particular, BF90 bamboo fiber (where 90 is the length in microns of the fiber molecules) is suitable for the preparation of sauces, salad dressings, flavorings, dairy products, and cheeses, where it ensures improved viscosity, consistency, and density, while also acting as an anti-caking agent.
