Type 00 soft wheat flour. Ideal for making shortcrust pastry, tarts, sponge cakes, and baked cakes. The grains selected for this flour produce crumbly, sturdy, and compact doughs, even in low-fat recipes. The addition of new types of wheat, compared to the traditional blend, allows for better involution of fats around the flour particles, preventing the formation of gluten when liquids are added. The resulting dough will therefore have the right crumbly texture, without losing consistency.
