The genus Glycyrrhiza comprises 18 species widespread in Eurasia, Australia, and the Americas. This plant is a hardy, frost-resistant herbaceous perennial, growing primarily in southern Europe in calcareous and/or clayey soils. The roots of three- to four-year-old licorice plants are used, harvested during the autumn season. It is excellent for making homemade licorice ice cream, ideal for a variety of culinary uses, and indispensable for making homemade licorice liqueur.
