Type 00 soft wheat flour, created in collaboration with the Masters of the Accademia del Lievito Madre, promotes the bonding of doughs with rich, fatty ingredients. Capable of ensuring balanced fermentation throughout the leavening process, without making the dough tough. It adds softness and texture to leavened products without structural defects. Balanced, soft, and naturally robust, it expresses the combination of technical and professional needs. Probably the ultimate in flours for large leavened products, because it is the result of joint research carried out between the Accademia dei Maestri del Lievito Madre and Agugiaro & Figna Lab.
