Compared to soft wheat, durum wheat has a higher protein content and a floury section made up of hard, sharp-edged grains. Mulino Marino uses cylinder milling: a process where the flour is almost never re-milled and the steps to obtain the final product are kept to a minimum. The flour is certified organic.
